Heathen Chili Rancho Beef

Heathen Chili Rancho Beef         Serves 6
Add more beans or corn for extra servings.
1 tablespoon oil or pan coating spray
500g lean mince
2 teaspoons Bittersweet Zesty Garlic
2 teaspoons Bittersweet Italian 
½ tablespoon Bittersweet Heathen Chilli (can always add more later if not hot enough)
1½ cups tomato juice
1 x 310g tin whole kernel corn, drained
1 x 185g tin Three Bean Mix, drained and refreshed
100g Colby cheese, cut into 1 cm cubes

     In large skillet, heat oil and cook onion until clear. Add mince, brown and crumble. Drain if necessary. Add rest of ingredients, except cheese. Stir well. Simmer at least 20 minutes and stir often. Just before serving, stir in cheese cubes and serve when cheese is softened. Serve with taco chips, rice and a bowl of Bittersweet Heathen Chilli Dip for a garnish if desired.
