Lasagna Made Simpler

Lasagna Made Simpler     Serves 8-10

2 x 440g tins unseasoned crushed or diced tomatoes
4 tablespoons BITTERSWEET Italian Blend** 
10-12 lasagna ready to use noodles 
1 medium onion, finely chopped
2 cups cooked spinach or silverbeet, well squeezed and chopped
250g cottage cheese (low fat works well)
2 eggs, beaten
½ cup Bulgar wheat
1 cup grated mozzarella, divided
½ cup grated Parmesan cheese

     Mix tomatoes and Bittersweet Italian Blend. Pour half tomatoes in bottom of 25x35 cm baking dish. Cover with one layer of pasta. Mix onion, spinach, cottage cheese, eggs, Bulgar wheat and half mozzarella and spread half on pasta. Cover with remaining pasta. Repeat spread. Cover with remaining sauce and sprinkle with remaining mozzarella and Parmesan cheese. Bake at 180°C for 45 minutes. 

     **Can substitute Bittersweet So Savoury, Tarragon or Zesty Garlic
