Lunchbox Oat Bars

Lunchbox Oat Bars        Makes 16 bars 
1-2 cups mixed dried fruits, nuts and seeds
¼ cup chopped crystallised ginger
1 cup wholemeal flour
1½ cups rolled oats
1 egg
¼ cup brown sugar
¼ cup oil
½ cup Bittersweet Mulled Juice (any flavour)

      Preheat oven to 170°. Line a square 20cm baking dish with baking paper. Chop fruit and nuts (Tip: use kitchen scissors to chop sticky fruit). Mix all ingredients. Turn into prepared baking dish, pressing down to make an even surface. Bake 40 minutes. Cool well before cutting into bars.
